For health, some people eat salads with little or no dressing. This is because a high-calorie salad dressing makes you gain weight. However, if you eat salad dressings properly, you can increase the absorption of fat-soluble vitamins in food.

Salad ingredients like vegetables and nuts contain high amounts of water-soluble vitamins such as vitamin B and vitamin C. These vitamins are easily absorbed by the body. The problem is that vegetables also contain fat-soluble vitamins such as vitamin A, vitamin E, and vitamin K. Fat-soluble vitamins must be mixed with fats like oil to be absorbed into the body. If you just eat vegetables that are completely free of oil, fat-soluble vitamins such as vitamins A, E, and K will not be absorbed by the body. Experts say that if you eat salads without oily dressings, fat-soluble vitamins are hardly absorbed. Therefore, you should eat oily dressings together to absorb fat-soluble vitamins in salads.

In fact, according to a study by the Iowa State University research team in the American Journal of Clinical Nutrition, the more vegetable oils added to salads, the more nutrients the vegetables absorb in the body. Twelve women were asked to eat a salad containing five kinds of vegetables: spinach, carrot, cherry, tomato, and lettuce. As a result, the absorption of vitamin E, vitamin K and vitamin A in vegetables increased in proportion to the concentration of soybean oil.

For dressings that are good for salads, choose a base that's low-flavored and flavored, like canola or olive oil. Corn oil has a strong fragrance that can make it difficult to taste the salad. You can mix it with lemon or vinegar, which is rich in sourness. Oil helps to absorb fat-soluble vitamins, while lemon and vinegar can help absorb water-soluble vitamins.
